CARROT CAKE BAKED OATS RECIPE

- 1/3 cup freshly grated carrots
- 1/2 cup rolled oats or quick oats
- 1/2 teaspoon baking powder
- 1 pinch of nutmeg
- 1 pinch of salt
- 1/2 teaspoon cinnamon
- 5 teaspoons sugar or sweetener of choice
- 1/4 cup unsweetened applesauce
- 1/2 teaspoon vanilla extract
- 1/4 cup unsweetened vanilla almond milk
- 1 egg
Clean, peel, and carefully grate one medium-sized carrot. This is about 1/3 cup of grated carrots.
Place the rolled oats in a blender and blend them until you have oat flour. Make sure the oats are thoroughly blended.
Add the baking powder, nutmeg, salt, cinnamon, and sugar or sweetener of choice to the blender and blend.
Add the unsweetened applesauce, vanilla extract, freshly grated carrots, unsweetened vanilla almond milk, and egg to the blender and blend until everything is combined. Make sure the carrots are blended so they cook. Or, mix your carrots in at the end as long as they are extra finely grated so they will cook. If the carrots are not grated finely enough they will not cook in the oven which is why you can blend them with the rest of the ingredients.
Lightly spray an oven-safe six-ounce ramekin with coconut oil or your oil of choice. Pour the baked oats batter into the ramekin.
Place the ramekin on a baking sheet and bake at 350℉ for 27-30 minutes or until cooked. Let the baked oats slightly cool and enjoy! This recipe would be delicious with some of our cream cheese frosting or your favorite whipped cream.
- Milk To Use: Use unsweetened vanilla almond milk, regular unsweetened almond milk, or unsweetened oat milk in this recipe.
- Frosting: To make cream cheese frosting, combine 1 tablespoon of light cream cheese, 1 teaspoon of powdered sugar, and 2 drops of vanilla extract.
- Oats To Use: Use old-fashioned rolled oats or quick oats. If you have oat flour on hand, feel free to use that instead. If not, simply blend the rolled oats to make your own oat flour.
