First, make the graham cracker crust. Lightly crumble the graham crackers as you add them to a food processor. Then, add the cinnamon and brown sugar or brown sugar substitute. After that, pulse these ingredients in the food processor. Next, add the unsweetened applesauce to the food processor and pulse again until combined.
Transfer the pulsed ingredients in the food processor to a pie dish. Then, form the graham cracker crust. Press the crust together using the bottom of a measuring cup and your hands until the crust is formed.
Once the graham cracker crust is formed in the pie dish, bake it at 350°F for 10-12 minutes. Then, let the crust completely cool, this will take about 15-20 minutes.
While the graham cracker crust cools, make the chocolate pudding. Add the cold milk and package of chocolate instant pudding mix of choice to a large bowl. After that, use an electric hand mixer to combine the ingredients to make the pudding, this will take about 3 minutes.
Once the crust has cooled, pour the chocolate pudding over top.
Cover the pie with plastic wrap or foil and refrigerate it for at least 4 hours to allow the pudding to set.
Once the pudding has set and when ready to serve, top the pie with a whipped cream topping of choice and optional chocolate shavings. Then, slice the pie and enjoy!
