- 6 large eggs
- 1 cup fat-free cottage cheese
- 3 ounces shredded light Swiss cheese
- 1 cup diced or chopped cooked ham we used deli ham
- 2 tablespoons fresh chives chopped
- 1 teaspoon stone-ground mustard or Dijon mustard
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
Finely chop the cooked ham. We chopped deli ham for this recipe.
Crack the eggs into a large bowl and whisk them.
Add the cottage cheese, shredded light Swiss cheese, chopped cooked ham, chopped fresh chives, stone-ground mustard, salt, pepper, garlic powder, and onion powder to the bowl.
Mix the ingredients in the bowl.
Lightly spray a 9-inch pie dish or baking dish with oil. Then, pour the mixture into the dish. Bake the quiche at 350°F for 35-40 minutes, or until the center is set and the top is lightly golden.
Let the quiche cool for 15–20 minutes before slicing and serving to ensure a firm and creamy texture. Garnish with extra chopped chives if desired, and enjoy!
- Ham: Choose your favorite deli or cooked ham for this recipe. Or, if you have leftover ham from Easter or a holiday meal, this quiche is a perfect way to use it!
- Cottage Cheese Options: Use fat-free, low-fat, or full-fat cottage cheese based on your preference.
- Cheese Variations: You can swap the Swiss cheese for a different cheese in this quiche if preferred. Some options are cheddar, Gruyère, or Mozzarella cheese.
