PUMPKIN OATMEAL CHOCOLATE CHIP COOKIES

- 1 cup rolled oats
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/4 cup brown sugar or Swerve
- 1/4 cup unsweetened applesauce
- 1/3 cup pumpkin puree
- 1/4 cup mini chocolate chips
Take 1/2 cup of the rolled oats and blend them in a blender to turn them into oat flour. Keep the other 1/2 cup of the rolled oats whole. Then, add both to a bowl.
Add the baking powder, pumpkin pie spice, vanilla extract, Swerve or brown sugar, unsweetened applesauce, pumpkin puree, and mini chocolate chips to the bowl. To make this recipe vegan use vegan chocolate chips.
Thoroughly combine all of the ingredients. Once combined, use a small cookie scooper to form 15-17 cookies. Place the cookies on a sheet pan with a silicone baking mat or parchment paper. Bake at 350℉ for 12-14 minutes and enjoy!
- Storage: You can store these cookies in the refrigerator for 3-4 day or freeze them for up to 3 months.
