- 2 boneless, skinless chicken breasts sliced in half lengthwise into cutlets
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1-2 teaspoons olive oil or use olive oil spray
- 1/2 cup marinara sauce
- 1/2 cup shredded light mozzarella cheese
- 4-5 fresh basil leaves optional
Slice each chicken breast in half lengthwise to create cutlets.
Pat the chicken dry with paper towels, then lightly season both sides with salt and pepper.
In a shallow bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, dried basil, salt, and pepper.
Coat the chicken with olive oil in a bowl or lightly spray the chicken with olive oil on both sides.
Press each coated chicken cutlet into the breadcrumb mixture, coating both sides well.
Preheat your air fryer to 375°F. Place the coated chicken breast cutlets in a single layer in the air fryer basket. Cook for 6-7 minutes, flip, then cook for another 4-6 minutes, or until golden brown and the internal temperature reaches 165°F.
Spoon marinara sauce over each piece and sprinkle with mozzarella cheese. Then, air fry for another 1-2 minutes, just until the cheese melts.
Garnish with fresh basil, serve warm, and enjoy!
- Extra Crispiness: For extra crispiness, once the chicken is breaded on both sides, lightly spray the breadcrumb coating with olive oil before air frying.
- Don’t Overcrowd: Arrange the chicken cutlets in a single layer in the air fryer basket without overcrowding.
- The Best Breadcrumbs: Use panko breadcrumbs for maximum crunch and flavor. Or, use plain breadcrumbs. For a gluten-free option, substitute with gluten-free breadcrumbs or crushed cornflakes! You can use Italian breadcrumbs, but reduce the added seasonings by half.
- Olive Oil Substitution: If preferred, you can use an egg wash instead of olive oil spray. Simply dip each chicken cutlet into a shallow bowl with one beaten egg before coating it in the breadcrumb mixture.
- Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days.
