AIR FRYER CHICKEN PARMESAN

  • 2 boneless, skinless chicken breasts sliced in half lengthwise into cutlets
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-2 teaspoons olive oil or use olive oil spray
  • 1/2 cup marinara sauce
  • 1/2 cup shredded light mozzarella cheese
  • 4-5 fresh basil leaves optional

Instructions

  • Slice each chicken breast in half lengthwise to create cutlets.
  • Pat the chicken dry with paper towels, then lightly season both sides with salt and pepper.
  • In a shallow bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, dried basil, salt, and pepper.
  • Coat the chicken with olive oil in a bowl or lightly spray the chicken with olive oil on both sides.
  • Press each coated chicken cutlet into the breadcrumb mixture, coating both sides well.
  • Preheat your air fryer to 375°F. Place the coated chicken breast cutlets in a single layer in the air fryer basket. Cook for 6-7 minutes, flip, then cook for another 4-6 minutes, or until golden brown and the internal temperature reaches 165°F.
  • Spoon marinara sauce over each piece and sprinkle with mozzarella cheese. Then, air fry for another 1-2 minutes, just until the cheese melts.
  • Garnish with fresh basil, serve warm, and enjoy!

Notes

  • Extra Crispiness: For extra crispiness, once the chicken is breaded on both sides, lightly spray the breadcrumb coating with olive oil before air frying.
  • Don’t Overcrowd: Arrange the chicken cutlets in a single layer in the air fryer basket without overcrowding.
  • The Best Breadcrumbs: Use panko breadcrumbs for maximum crunch and flavor. Or, use plain breadcrumbs. For a gluten-free option, substitute with gluten-free breadcrumbs or crushed cornflakes! You can use Italian breadcrumbs, but reduce the added seasonings by half.
  • Olive Oil Substitution: If preferred, you can use an egg wash instead of olive oil spray. Simply dip each chicken cutlet into a shallow bowl with one beaten egg before coating it in the breadcrumb mixture.
  • Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days.
