Ingredients

  • 1 cup plain non-fat Greek yogurt
  • 2 tablespoons chipotle peppers in adobo sauce finely chopped
  • 1 tablespoon powdered ranch seasoning
  • 2 teaspoons fresh lime juice
  • 1-2 tablespoons of milk of choice optional for desired thickness

Instructions

  • Add the Greek yogurt, chopped chipotle peppers in adobo sauce, powdered ranch seasoning, fresh lime juice, and milk to a blender or food processor.
  • Blend until smooth and creamy, scraping down the sides as needed to make sure everything's fully incorporated. Chill the dressing before serving to let the flavors further meld together, or enjoy right away.

Notes

  • Greek Yogurt to Use: Nonfat, 2%, or full-fat Greek yogurt all work.
  • Lime Swap: You can use fresh lemon juice instead if you don't have lime.
  • Adjust the Milk: If using this as a dip instead of a dressing, skip the milk for a thicker consistency.
  • Mix: If you don't have a blender or food processor, you can thoroughly mix this by hand, just make sure the chipotle peppers in adobo sauce are finely chopped first.
  • Freeze Chipotle Peppers in Adobo: I've made this recipe plenty of times, and there's always leftover chopped chipotle peppers in adobo sauce. My favorite tip is to freeze the chopped peppers in an ice cube tray, adding about 1 tablespoon to each portion. That way, you'll have them ready to use the next time you need chipotle peppers in adobo!
