- 2 cups fully-cooked boneless, skinless chicken breasts shredded or diced
- 3/4 cup chopped dill pickles chips, spears, or whatever you like
- 3/4 cup chopped celery
- 1/4 cup finely chopped red onion
- 3/4 cup plain non-fat Greek yogurt
- 1 tablespoon pickle brine
- 1 tablespoon chopped fresh dill
- 1 teaspoon Dijon or stone-ground mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground black pepper plus additional to taste
- 1 pinch salt or to taste
Optional Add-Ins
- 1 tablespoon chopped chives
- 1 tablespoon chopped parsley
- 1 pinch smoked paprika
Add the cooked and shredded chicken, chopped dill pickles, chopped celery, and finely chopped red onion to a large bowl. Lightly mix these ingredients.
To a separate medium bowl, add the Greek yogurt, pickle brine, chopped fresh dill, mustard, garlic powder, onion powder, pepper, and salt. Then, thoroughly mix the sauce.
Pour the sauce into the bowl with the chicken salad mixture. Thoroughly toss until the chicken salad is evenly coated. Then enjoy, or chill it in the fridge until ready to serve.
- Dill Pickles to Use: Sandwich pickles, pickle chips, pickle spears, or whole pickles all work, just roughly chop them.
- Chicken to Use: Any fully cooked diced or shredded chicken works, like rotisserie chicken, slow cooker shredded chicken, or drained canned chicken.
- Onion Swap: Swap the red onion for sliced green onions for a milder flavor.
- Dried Dill: No fresh dill? Use 1 teaspoon dried dill in place of 1 tablespoon fresh.
