Garlic Parmesan Spaghetti Squash

This garlic parmesan spaghetti squash is a simple, healthy recipe that’s easy to make and full of flavor. It’s perfect as a low-carb side dish.

Ingredients

  • 1 medium spaghetti squash
  • 2 teaspoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt or more to taste
  • 1/8 teaspoon pepper or more to taste
  • 1/3 cup grated Parmesan cheese
  • chopped fresh basil or parsley optional

Instructions

  • Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Drizzle the cut sides with olive oil and season evenly with salt and pepper.
  • Place the squash cut-side down on a baking sheet lined with parchment paper. Bake at 400°F for 35-45 minutes, or until the squash is tender and the strands can be easily pulled away with a fork.
  • Once roasted, let the spaghetti squash cool slightly so excess steam can escape. This helps prevent the strands from becoming soggy. Use a fork to scrape the squash into spaghetti-like strands.
  • Transfer the strands to a bowl and toss with garlic powder, onion powder, dried oregano, dried basil, and grated Parmesan cheese.
  • Serve warm and top with fresh chopped basil or flat-leaf parsley, if desired.

Notes

  • Use Freshly Grated Parmesan: Freshly grating the Parmesan or using a high-quality grated Parmesan adds the best flavor and melts better into the warm spaghetti squash.
  • Butter: You can add a small amount of butter or light butter once done for extra richness.
