Ingredients

  • 1 ½ cups Kodiak Cakes Buttermilk Power Cakes pancake mix
  • 1/2 teaspoon baking powder
  • 1 ½ teaspoons pumpkin pie spice
  • 3 tablespoons brown sugar or 1:1 sugar-free sweetener
  • 1 egg whisked
  • 1 cup pumpkin puree
  • 3/4 cup unsweetened almond milk or milk of choice
  • 1 teaspoon vanilla extract
  • 2 tablespoons chopped walnuts optional for the top

Instructions

  • In a large bowl, thoroughly mix the Kodiak Cakes, baking powder, pumpkin pie spice, and sweetener.
  • In a separate medium bowl, whisk together the egg, pumpkin puree, almond milk, and vanilla extract until combined.
  • Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring until fully combined. Don't over-mix.
  • Line a 9x13-inch sheet pan with parchment paper. Evenly spread the pancake batter onto the sheet pan. Add optional toppings, such as mini chocolate chips, chopped walnuts, pecans, or pumpkin seeds, if desired.
  • Bake at 400°F for 11-13 minutes, or until the pancakes are cooked through and a toothpick inserted into the center comes out clean.
  • Once done, slice the pancakes and serve warm with a drizzle of maple syrup or sugar-free maple syrup, and enjoy!

Notes

  • Optional Toppings: Some optional toppings are mini chocolate chips, sugar-free chocolate chips, chopped walnuts, pecans, or pumpkin seeds.
  • Sweetener: This recipe works with brown sugar, regular sugar, or your favorite 1:1 sugar-free sweetener.
  • Pumpkin Pie Spice: If you don’t have store-bought pumpkin pie spice, simply replace it with cinnamon or make homemade pumpkin pie spice with 1 teaspoon of cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of ground ginger.
  • Kodiak Cakes Swap: If you don't have Kodiak Cakes, you can use your favorite pancake mix instead. You can also substitute all-purpose flour, but use 1 teaspoon of baking powder since Kodiak Cakes already contains leavening agents.
