- 12 ounces cooked chicken sausage sliced into coins
- 2 bell peppers any color, sliced
- 1 large sweet or red onion sliced
- 12 kalamata olives pitted and sliced
- 2 ounces crumbled light feta cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon pepper or to taste
- fresh parsley optional
Slice the cooked chicken sausage into coins. Cut the onion in half, then into quarters, and slice into thick strips. Slice the bell peppers into long strips and roughly chop the olives.
Add the bell peppers and onion to a sheet pan, spray with olive oil, and season with garlic powder, oregano, salt, and pepper. Toss to coat.
Add the sausage and olives, then toss again until everything is evenly combined.
Spread into a single layer on a sheet pan lined with parchment paper. Bake at 400°F for 30-35 minutes, stirring halfway through, until caramelized.
Remove from the oven and sprinkle with crumbled feta and chopped fresh parsley. Serve as is or over cauliflower rice.
