Servings: 6 servings
- 1, 15-ounce can pumpkin puree
- 1/2 cup fat-free cottage cheese
- 1/2 cup sugar or 1:1 sugar-free sweetener
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 pinch of salt
- 9 graham cracker squares
- 1.5 cups Coco Whip, TruWhip, fat-free Cool Whip, or whipped cream of choice thawed
Make the Pumpkin Filling: Add the pumpkin puree, cottage cheese, sweetener, pumpkin pie spice, vanilla extract, and salt to a blender or food processor. Blend until the filling is smooth and creamy.
Assemble the Layers: In a 9-inch loaf pan, add a layer of 3 graham cracker squares, followed by 1/2 of the pumpkin filling. Add another layer of 3 graham cracker squares and the remaining pumpkin filling. Spread a layer of whipped topping over the filling. Add the last 3 graham cracker squares. Finish by spreading the remaining whipped topping evenly over the top.
Chill the Icebox Cake: Cover the dish with a lid or foil and refrigerate for at least 4 hours, or overnight. This allows the graham crackers to soften into a delicious, cake-like texture while the icebox cake sets.
Serve: Once chilled and set, slice, serve, and enjoy!
- Cottage Cheese Options: I like to use fat-free or low-fat cottage cheese for a lighter pumpkin filling, but full-fat cottage cheese works, too, if you prefer an even creamier texture.
- Graham Crackers Swap: You can use regular graham crackers, chocolate graham crackers, or gingersnaps.
- Whipped Topping to Use: I like to use lighter whipped toppings like CocoWhip, TruWhip, or fat-free Cool Whip. You can also use traditional whipped cream if you prefer.
- Optional Toppings: Enjoy this pumpkin icebox cake as is, or top with crushed graham crackers, chopped walnuts, or pecans.
