Scrambled Eggs With Cottage Cheese

Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese fat-free, low-fat, or full-fat
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1 pinch of pepper
  • sliced green onions or chives optional

Instructions

  • Crack the eggs into a large bowl. Then, whisk the eggs. Next, add the cottage cheese, garlic powder, salt and pepper. Whisk together all the ingredients.
  • Lightly spray a non-stick skillet with olive oil over medium-low heat on the stove.
  • Pour the egg mixture into the skillet to cook the scrambled eggs. Use a spatula to stir gently, until the eggs are set yet creamy and soft.
  • Once cooked, remove the scrambled eggs from the heat and transfer them to a plate. Top with optional sliced green onions or chives and enjoy!

Notes

  • Cottage Cheese: You can use fat-free, low-fat, or full-fat cottage cheese for this recipe.
  • Nonstick Pan: Make sure to use a non-stick pan and lightly spray it with oil so the eggs don’t stick to the pan.
  • Don’t Cook On High Heat: Cook these scrambled eggs with cottage cheese over medium-low heat. Do not cook them over high heat or the cottage cheese may separate and the eggs may become watery.
