Ingredients

  • 12 ounces fully cooked chicken sausage sliced into rounds
  • 2 medium sweet potatoes peeled and cubed
  • 1 medium apple (Granny Smith, Honeycrisp, or Fuji) peeled and diced
  • 1 large sweet onion sliced
  • 4-6 sprays of olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons - 1 tablespoon hot honey or to taste
  • 1 tablespoon chopped fresh parsley optional

Instructions

  • Peel and cube the sweet potatoes. Peel and dice the apple. Cut the onion in half, then into quarters, and slice. Slice the fully cooked chicken sausage into rounds.
  • Add the diced sweet potatoes, diced apple, and sliced onion to a large sheet pan lined with parchment paper. Lightly spray with olive oil and toss with garlic powder, smoked paprika, cinnamon, salt, and black pepper until evenly coated.
  • Roast at 400°F for 20 minutes. Then, carefully remove the pan from the oven and give everything a good stir.
  • Add the sliced chicken sausage to the pan and roast for an additional 20-25 minutes, until the sweet potatoes are tender and everything is lightly caramelized. Adding the sausage later helps prevent it from burning or drying out.
  • Drizzle with hot honey just before serving. Top with optional chopped fresh parsley and enjoy!

Notes

  • Onion: We love sweet onions in this recipe, but you can also use white, yellow, brown, or red onions instead for a different flavor profile.
  • Hot Honey: You can use regular honey instead of hot honey. For a little heat, add ¼ teaspoon of red pepper flakes, or more to taste. You can also use sugar-free honey with the red pepper flakes.
  • Sausage: Be sure to use fully cooked sausage for this recipe. Sweet Italian chicken sausage and chicken apple sausage are our favorites, but you can also use smoked Andouille, kielbasa, maple pork sausage, or your favorite sausage.
  • Apples: We used Granny Smith apples for their crisp texture and slightly tart flavor, but Honeycrisp or Fuji apples also work beautifully for a slightly sweeter flavor.
