Apple Cinnamon Sheet Pan Pancakes

Apple cinnamon sheet pan pancakes made with Kodiak Cakes, fresh apples, applesauce, cinnamon, and nutmeg. An easy fall breakfast with no flipping required!

Ingredients

  • 1 ¼ cups Kodiak Cakes Buttermilk Power Cakes pancake mix
  • 2 teaspoons cinnamon
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 3/4 cup unsweetened almond milk or milk of choice
  • 1 teaspoon vanilla extract
  • 1 medium apple peeled and chopped
  • 2 tablespoons chopped walnuts optional

Instructions

  • Add the Kodiak Cakes, cinnamon, nutmeg, and baking powder to a large bowl and mix to combine.
  • Add the egg, applesauce, almond milk, and vanilla extract to a separate medium bowl and whisk until combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to over-mix the batter.
  • Peel and chop the apple into small, even-sized pieces, then gently fold them into the batter.
  • Line a 9x13-inch sheet pan with parchment paper. Spread the batter into an even layer on the sheet pan, then sprinkle the optional chopped walnuts over the top.
  • Bake at 400°F for 10-12 minutes, or until the center is set and a toothpick inserted into the center comes out clean. Let the sheet pan pancakes cool slightly, then slice them into 6 pieces. Drizzle with maple syrup or sugar-free maple syrup and enjoy!

Notes

  • Apple Texture: I’ve made these pancakes with grated apples, finely diced apples, and larger chunks. They all work, so choose whichever texture you prefer!
  • Apple Options: We used Pink Lady apples, but Gala, Fuji, and Honeycrisp apples also work well in this recipe.
  • Milk Options: Any milk works in this recipe. I usually use unsweetened almond milk, but you can also use oat milk, cashew milk, regular milk, or your favorite milk.
  • Pancake Mix Options: If you don’t have Kodiak Cakes, you can use your favorite pancake mix instead.
