These apple cinnamon sheet pan pancakes are one of my favorite ways to enjoy pancakes in the fall! They’re made with Kodiak Cakes pancake mix, fresh apples, applesauce, cinnamon, and a little nutmeg for that classic apple cinnamon flavor.

What I love most is how easy they are to make. Instead of standing over the stove flipping pancakes one at a time, you simply spread the batter onto a sheet pan and let the oven do the work. They bake up soft and fluffy with delicious apple cinnamon flavor in every bite.

  • Apple Texture: I’ve made these pancakes with grated apples, finely diced apples, and larger chunks. They all work, so choose whichever texture you prefer!
  • Apple Options: We used Pink Lady apples, but Gala, Fuji, and Honeycrisp apples also work well in this recipe.
  • Milk Options: Any milk works in this recipe. I usually use unsweetened almond milk, but you can also use oat milk, cashew milk, regular milk, or your favorite milk.
  • Walnuts: The walnuts are optional. You can leave them out or swap them for chopped pecans or slivered almonds.
  • Pancake Mix Options: If you don’t have Kodiak Cakes, you can use your favorite pancake mix instead.

How to Make Apple Cinnamon Sheet Pan Pancakes

  1. Add the Kodiak Cakes, cinnamon, nutmeg, and baking powder to a large bowl and mix to combine.

  1. Add the egg, applesauce, almond milk, and vanilla extract to a separate medium bowl and whisk until combined.

  1. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to over-mix the batter.

  1. Peel and chop the apple into small, even-sized pieces, then gently fold them into the batter.

  1. Line a 9×13-inch sheet pan with parchment paper. Spread the batter into an even layer on the sheet pan, then sprinkle the optional chopped walnuts over the top.

  1. Bake at 400°F for 10-12 minutes, or until the center is set and a toothpick inserted into the center comes out clean. Let the sheet pan pancakes cool slightly, then slice them into 6 pieces. Drizzle with maple syrup or sugar-free maple syrup and enjoy!

  • Whisk Separately: Whisk the wet ingredients and dry ingredients separately before combining them. This helps everything mix evenly.
  • Cut the Apple Evenly: Cut the apple into similar-sized pieces so it cooks evenly.
  • Don’t Over-mix: Mix the batter just until the ingredients are combined. Over-mixing can make the pancakes less tender.
  • Spread the Batter: Spread the batter into an even layer on the sheet pan, so the 
  • pancakes cook evenly.
  • How to Tell When They’re Done: The pancakes should be golden around the edges, and the center should look set. You can also insert a toothpick into the center. If it comes out clean, they’re ready!

Serving Suggestions

Storage Instructions

Store leftover apple cinnamon sheet pan pancakes in an airtight container in the refrigerator for 3-4 days. You can also freeze them for later! To freeze, place the pancakes in a freezer-safe bag or container and freeze for up to 1-2 months.
