Servings: 2 servings
- 2 medium russet potatoes
- olive oil spray
- 1/4 teaspoon salt or to taste
- 1 pinch of pepper or to taste
- garlic powder or smoked paprika optional
Wash and scrub your potatoes well, then pat them dry. Poke each potato several times with a fork to allow steam to escape.
Wrap each potato loosely in tin foil and air fry at 400°F for 25-30 minutes. This steams the inside for a super soft and fluffy texture.
Carefully remove the foil, spray each potato with olive oil, and sprinkle with salt and pepper. Air fry uncovered at 400°F for about 10 minutes, until the skin is golden and crispy and the potatoes are soft and tender inside.
Once done, let the potatoes slightly cool. Make a lengthwise cut down the center, gently fluff the inside with a fork, and add your favorite toppings.
- Dry the Potatoes: After washing, thoroughly dry the potatoes so the skins get crispy.
- Don’t Overcrowd: Make sure not to overcrowd the air fryer basket. Cook in batches if needed, depending on how many potatoes you’re making.
- Optional Toppings: Top with light sour cream, Greek yogurt, light butter, cooked bacon, chives, cheese, or your favorite toppings.
