- 1 ½ cups Kodiak Cakes Buttermilk Power Cakes Mix
- 1/2 teaspoon baking powder
- 1/2 cup Dutch-processed cocoa powder
- 2 large eggs
- 1/2 cup 0-fat Greek yogurt
- 1/2 cup unsweetened almond milk or milk of choice
- 1/3 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 3/4 cup sugar or 1:1 sugar-free sweetener
Add the Kodiak Cakes mix and baking powder to a large bowl. Then, sift the cocoa powder into the bowl. This helps create a smooth batter and avoid lumps. Thoroughly mix these dry ingredients.
In a separate large bowl, thoroughly whisk the eggs and Greek yogurt until smooth, and there are no lumps. Then, whisk in the milk, applesauce, vanilla extract, and sweetener until smooth.
Pour the wet ingredients into the bowl with the dry ingredients a little at a time, until the batter is fully incorporated, making sure not to over-mix.
Lightly spray a non-stick muffin pan with oil or line it with parchment paper muffin liners. Pour the batter into the muffin cups.
Bake the muffins at 350°F for 17-18 minutes, or until a toothpick inserted into the center comes out clean. Then, let them slightly cool, and enjoy!
- Whisk Well: Thoroughly whisk the eggs and Greek yogurt so there are no lumps before adding the milk, applesauce, vanilla, and sweetener.
- Adjust for Sugar Substitutes: If using a sugar substitute, the batter may be thicker, as they can absorb more liquid. If needed, add one tablespoon of milk at a time until the batter reaches the right consistency.
- Double Chocolate Muffins: For double chocolate Kodiak muffins, add 1/4 cup of mini chocolate chips to the batter. For a sugar-free option, use sugar-free chocolate chips or roughly chop a sugar-free chocolate bar.
