Chocolate Kodiak Protein Muffins

These Chocolate Kodiak Protein Muffins are made with Kodiak Cakes, Greek yogurt, and applesauce. They’re easy to make, protein-packed, and full of chocolatey goodness.

Ingredients

  • 1 ½ cups Kodiak Cakes Buttermilk Power Cakes Mix
  • 1/2 teaspoon baking powder
  • 1/2 cup Dutch-processed cocoa powder
  • 2 large eggs
  • 1/2 cup 0-fat Greek yogurt
  • 1/2 cup unsweetened almond milk or milk of choice
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar or 1:1 sugar-free sweetener

Instructions

  • Add the Kodiak Cakes mix and baking powder to a large bowl. Then, sift the cocoa powder into the bowl. This helps create a smooth batter and avoid lumps. Thoroughly mix these dry ingredients.
  • In a separate large bowl, thoroughly whisk the eggs and Greek yogurt until smooth, and there are no lumps. Then, whisk in the milk, applesauce, vanilla extract, and sweetener until smooth.
  • Pour the wet ingredients into the bowl with the dry ingredients a little at a time, until the batter is fully incorporated, making sure not to over-mix.
  • Lightly spray a non-stick muffin pan with oil or line it with parchment paper muffin liners. Pour the batter into the muffin cups.
  • Bake the muffins at 350°F for 17-18 minutes, or until a toothpick inserted into the center comes out clean. Then, let them slightly cool, and enjoy!

Notes

  • Whisk Well: Thoroughly whisk the eggs and Greek yogurt so there are no lumps before adding the milk, applesauce, vanilla, and sweetener.
  • Adjust for Sugar Substitutes: If using a sugar substitute, the batter may be thicker, as they can absorb more liquid. If needed, add one tablespoon of milk at a time until the batter reaches the right consistency.
  • Double Chocolate Muffins: For double chocolate Kodiak muffins, add 1/4 cup of mini chocolate chips to the batter. For a sugar-free option, use sugar-free chocolate chips or roughly chop a sugar-free chocolate bar.
