Substitutions & Variations

  • Double Chocolate Muffins: To make Kodiak double chocolate muffins, add 1/4 cup of mini chocolate chips to the batter. For a sugar-free option, use Lily’s sugar-free chocolate chips or roughly chop a sugar-free chocolate bar.
  • Deeper Flavor: You can add an optional pinch of cinnamon or espresso powder to deepen the chocolate flavor.
  • Add Chopped Nuts: For a nutty twist, add up to 1/4 cup of chopped nuts, such as almonds or walnuts, to the batter.
  • Yogurt to Use: We used non-fat Greek yogurt to keep these muffins light, but 2% or whole milk Greek yogurt works too. Just be sure to use plain Greek yogurt.
  • Milk Options: Any milk will work! We used unsweetened almond milk, but you can also use regular milk, 1%, oat milk, cashew milk, or whatever you prefer.

Expert Tips

  • Use the Buttermilk Mix: Make sure to use the Kodiak Cakes Buttermilk Power Cakes Mix. Don’t use the chocolate Kodiak Cakes mix, as we added cocoa powder to this recipe for chocolate flavor.
  • Sift the Cocoa Powder: To help prevent lumps and to keep the batter smooth, sift your cocoa powder.
  • Don’t Over-mix: To keep the muffins light and fluffy, avoid over-mixing the muffin batter.
  • Whisk the Wet Ingredients: Thoroughly whisk the eggs and Greek yogurt so there are no lumps before adding the milk, applesauce, vanilla, and sweetener.
  • Adjust for Sugar Substitutes: If using a sugar substitute, the batter may be thicker, as they can absorb more liquid. If needed, add one tablespoon of milk at a time until the batter reaches the right consistency.

Storage Instructions

Fridge: Store these chocolate Kodiak protein muffins in an airtight container in the refrigerator for 2-3 days.

I’m going to update my review -yes you can taste the protein- but I’ve made these at least four times. I have one every morning with my protein coffee- and sometimes a second later in the day. Five stars.

Made these today with Bettergoods buttermilk protein pancake mix, and Whole Earth erythritol/ monkfruit. Added 1/4 cup Lilly’s sugar free dark chocolate chips. They were very good. They do have that protein taste- not quite as light as a regular muffin. I love a muffin in the morning with my protein coffee- these will be great – especially with the low points – the chips might make them 2 pts. Thank you ladies.

Hi Jana, thank you so much for sharing! I love the swaps you made, and the Lily’s chocolate chips sound like the perfect addition. Protein muffins can have a slightly different taste, but I’m so glad you enjoyed them with your morning protein coffee. And for just 1-2 points, that’s such a great win!
