Ingredients

  • 1 ¾ CUPS all-purpose flour

  • 1 ½ TSP baking soda

  • 2 TSP pumpkin pie spice

  • 3/4 CUP golden monk fruit or brown sugar

  • 2 eggs, whisked

  • 1 TSP vanilla extract

  • 1/4 CUP applesauce

  • 15 oz can pumpkin puree

Directions

  • Add the flour, baking soda, pumpkin pie spice, and golden monk fruit or brown sugar to a large bowl. Thoroughly combine the ingredients.
  • Once combined, add the whisked eggs, vanilla extract, applesauce, and pumpkin puree to the bowl. Combine all of the ingredients in the bowl.
  • Lightly spray a non-stick muffin pan with oil. Pour the muffin batter into the muffin pan, forming about 12 muffins. Bake the muffins at 350 degrees F for 25-30 minutes and enjoy!
