CRUSTLESS BACON AND CHEESE QUICHE

This delicious and easy crustless bacon and cheese quiche is lightened up and packed with protein! It’s the perfect healthy breakfast or light lunch.

Ingredients

  • 8 large eggs
  • 16 ounces fat-free cottage cheese (low-fat or full-fat also work)
  • 1, 8-ounce pack of turkey bacon
  • 3/4 cup light shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika optional
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons chopped fresh chives

Instructions

  • Place the turkey bacon slices on a baking sheet lined with parchment paper. Bake the bacon at 400°F for 15-20 minutes. Once done, let the cooked bacon cool and place it on paper towels to remove excess oil. Once cooled, chop the bacon into smaller pieces.
  • Crack the eggs into a large bowl. Then, whisk the eggs.
  • Add the cottage cheese, cooked chopped bacon, shredded cheddar cheese, garlic powder, onion powder, optional smoked paprika, salt, pepper, and chopped fresh chives.
  • Mix to incorporate all the ingredients.
  • Spray a 9-inch round, 2-inch deep, non-stick pie dish with oil. Then, pour the quiche mixture into the dish, spreading it evenly.
  • Bake the quiche at 350°F for 45-55 minutes or until fully cooked. Once done, let the quiche rest for at least 20 minutes to allow the cottage cheese to set before slicing and serving.

  • Cheese Options: Some other great cheese options are Gruyere, sharp cheddar, feta cheese, Parmesan cheese, or Swiss cheese.
  • Let The Quiche Rest: Allow the quiche to rest for at least 20 minutes before slicing. This step is crucial for allowing the cottage cheese to set.
  • Baking Dish Size: Use a 9-inch round pie dish for this quiche. If you don’t have a pie dish, you can use a 9x9-inch square baking dish.
  • Storage: Store leftover bacon and cheese quiche in an airtight container in the refrigerator for 3-4 days.
