Ingredients

  • 16 ounces fresh strawberries
  • 2 teaspoons sugar, monk fruit, or sweetener of choice
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon lemon juice optional
  • 1 pinch of lemon zest optional
  • 6 ladyfingers
  • 1/2 cup fat-free Cool Whip, CocoWhip, TruWhip, or whipped cream of choice

Instructions

  • Wash and dry the strawberries, then cut them into small pieces. Add them to a large bowl with sweetener, vanilla extract, optional lemon juice, and optional lemon zest.
  • Lightly mash the strawberry mixture to release the juices. A potato masher or fork works well for this.
  • Cut each ladyfinger into three pieces.
  • Assemble the jars by layering the strawberry mixture and ladyfinger pieces, repeating until the jars are full.
  • Cover and chill the tiramisu jars in the refrigerator for at least 1-4 hours to let the ladyfingers absorb the strawberry juices and soften.
  • When ready to serve, top with whipped cream and enjoy!

Notes

  • Chill: This recipe is best enjoyed after the strawberry tiramisu has been chilling for a while. If you can, we recommend making this recipe the day before.
