Servings: 4 servings
- 2 ounces light cream cheese
- 16 ounces 0-fat Greek yogurt
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/4 teaspoon lemon zest
- 1/4 cup sugar or 1:1 sugar-free sweetener for the filling, and 1 teaspoon for the raspberries
- 6 ounces fresh raspberries
- 2 ounces graham crackers (about 8 squares)
Let the light cream cheese soften to room temperature. To make the cheesecake filling, add the light cream cheese, 0-fat Greek yogurt, vanilla extract, lemon juice, lemon zest, and 1/4 cup of sweetener to a large bowl. Use a hand-held mixer to combine the ingredients until smooth. Or, thoroughly mix the ingredients with a spatula.
Wash and dry the raspberries. In a separate bowl, add the raspberries, 1 teaspoon of sweetener, and a pinch of lemon zest. Gently mash the raspberries with a potato masher or fork to release their juices.
Place the graham crackers in a ziplock bag, let the air out of the bag, and seal it. Crush the graham crackers with a rolling pin or the bottom of a cup.
To assemble the cheesecake jars, add one spoonful of graham crackers to the bottom of the jar. Next, add a layer of the cheesecake filling. Then, add a spoonful of raspberries. Repeat these steps and equally fill all jars with the ingredients.
Place the cheesecake jars in the refrigerator with the lids on and let them chill for at least 4 hours. When you are ready to serve, as an option, top them with some light whipped cream.
- Jars to Use: We used these Le Parfait Jars that hold 7-ounces. Any jars that hold at least 7 ounces with a lid will work. If you don't have jars, you can also use cups with lids or an airtight container.
