No-Bake Raspberry Cheesecake Jars

No-bake raspberry cheesecake jars made with Greek yogurt! A healthy, protein-packed dessert with a creamy cheesecake filling, graham crackers, and raspberries.

Ingredients

  • 2 ounces light cream cheese
  • 16 ounces 0-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon lemon zest
  • 1/4 cup sugar or 1:1 sugar-free sweetener for the filling, and 1 teaspoon for the raspberries
  • 6 ounces fresh raspberries
  • 2 ounces graham crackers (about 8 squares)

Instructions

  • Let the light cream cheese soften to room temperature. To make the cheesecake filling, add the light cream cheese, 0-fat Greek yogurt, vanilla extract, lemon juice, lemon zest, and 1/4 cup of sweetener to a large bowl. Use a hand-held mixer to combine the ingredients until smooth. Or, thoroughly mix the ingredients with a spatula.
  • Wash and dry the raspberries. In a separate bowl, add the raspberries, 1 teaspoon of sweetener, and a pinch of lemon zest. Gently mash the raspberries with a potato masher or fork to release their juices.
  • Place the graham crackers in a ziplock bag, let the air out of the bag, and seal it. Crush the graham crackers with a rolling pin or the bottom of a cup.
  • To assemble the cheesecake jars, add one spoonful of graham crackers to the bottom of the jar. Next, add a layer of the cheesecake filling. Then, add a spoonful of raspberries. Repeat these steps and equally fill all jars with the ingredients.
  • Place the cheesecake jars in the refrigerator with the lids on and let them chill for at least 4 hours. When you are ready to serve, as an option, top them with some light whipped cream.

Notes

  • Jars to Use: We used these Le Parfait Jars that hold 7-ounces. Any jars that hold at least 7 ounces with a lid will work. If you don't have jars, you can also use cups with lids or an airtight container.
  • Layers: These no-bake raspberry cheesecake jars are filled with delicious layers of graham crackers, cheesecake filling, and fresh raspberries.
  • Storage: These no-bake raspberry cheesecake jars are best enjoyed fresh after chilling in the refrigerator. They will last two days in the refrigerator.
