How To Make No-Bake Raspberry Cheesecake Jars

- Let the light cream cheese soften to room temperature. To make the cheesecake filling, add the light cream cheese, 0-fat Greek yogurt, vanilla extract, lemon juice, lemon zest, and sweetener to a large bowl. Use a hand-held mixer to combine the ingredients until smooth. Or, thoroughly mix the ingredients with a spatula.

- Wash and dry the raspberries. In a separate bowl, add the raspberries, sweetener, and a pinch of lemon zest. Gently mash the raspberries to release their juices.

- Place the graham crackers in a ziplock bag, let the air out of the bag, and seal it. Crush the graham crackers with a rolling pin or the bottom of a cup.

- To assemble the cheesecake jars, add one spoonful of graham crackers to the bottom of the jar. Next, add a layer of the cheesecake filling. Then, add a spoonful of raspberries. Repeat these steps and equally fill all jars with the ingredients.
- Place the cheesecake jars in the refrigerator with the lids on and let them chill for at least 4 hours. When you are ready to serve, as an option, top them with some light whipped cream.

Hi Melissa, great question! We used the Trader Joe’s graham crackers, for example, Honey Maid graham crackers, reduced-fat graham crackers, and reduced-fat cinnamon graham crackers, which work too. They all come out the same for this recipe. The key is the serving size. We used 2 ounces total (8 Trader Joe’s squares), which is 9 WeightWatchers Points for the entire recipe, making it 4 Points per serving. If you’re using a different brand, I’d recommend scanning the package in the WW app while you’re at the store just to be sure. As long as 2 ounces scan as 9 Points, your recipe will stay at 4 Points per serving. I hope this helps and you enjoy the recipe!
