How To Make Healthy Strawberry Tiramisu

- Wash and dry the strawberries. Then, chop them into small, even pieces. You can reserve a few strawberries to slice for garnish, if desired.

- Add the chopped strawberries to a large bowl. Then, add the sweetener, fresh lemon juice, and vanilla extract. Lightly mix these ingredients.

- Use a potato masher or fork to gently mash the strawberries just enough to release their juices, leaving some chunks intact.

- Add a layer of 12 ladyfingers in a 9×9-inch baking dish.

- Spread half of the strawberry mixture evenly over the ladyfingers.

- Spread half of the whipped topping over the strawberries. It helps to add four dollops first, then gently spread them into an even layer.

- Repeat these layers with the remaining 12 ladyfingers, followed by the remaining strawberries, and finish with the final layer of whipped topping.
- Once assembled, cover and chill in the refrigerator for at least 4 hours or overnight. When ready to serve, top with optional sliced strawberries for garnish, then serve and enjoy!
Expert Tips
- Sweeten the Strawberries to Taste: Depending on how sweet your strawberries are, you may want to adjust the amount of sweetener.
- Lightly Mash the Strawberries: Gently mash them just enough to release some of their juices while leaving chunks for texture.
- Save Some Strawberries For the Top: Reserve a few fresh strawberries to slice and garnish before serving for a beautiful finishing touch.
- Don’t Skip the Chill Time: Refrigerate at least 4 hours or overnight so the ladyfingers soften and the layers fully set.
Serving Suggestions
Serve this lighter strawberry tiramisu chilled straight from the refrigerator for the best creamy texture and cake-like layers. Just before serving, we like to top with extra fresh sliced strawberries for a simple and beautiful finish.
Storage Instructions
Store any leftover strawberry tiramisu in an airtight container in the refrigerator for 1-2 days. Freezing isn’t recommended, as it will change the texture of the tiramisu.
