SNICKERS BALLS

If you love Snickers, look no further than these incredible healthy Snickers balls! They are made with 5 simple ingredients and are easy to make.

Ingredients

  • 1 cup PB2 or PBfit (powdered peanut butter)
  • 6 ounces pitted Medjool dates
  • 2 ounces dry roasted unsalted peanuts roughly chopped
  • 1.75 ounce bar of dark chocolate melted
  • 2 ⅓ tablespoons milk of choice

Instructions

  • Add the PB2 or PBfit powdered peanut butter and pitted Medjool dates to a high-powered food processor with an S-shaped blade. Turn the food processor on high and pulse until combined. At the same time, pour the milk into the food processor gradually to help the ingredients come together. Continue to pulse and combine the ingredients.
  • Remove the mixture from the food processor and place it in a large bowl. Fold in the roughly chopped peanuts but save one tablespoon to sprinkle on top later.
  • Use a one-tablespoon cookie scoop and your hands to roll the mixture into balls. This recipe makes 16-18 Snickers balls.
  • Roughly chop the dark chocolate bar so that it is easier to melt. Then, melt the dark chocolate using the double boiler method or melt it in the microwave. Once the chocolate is melted, roll the balls in the chocolate and coat them. Place the balls on a sheet pan with parchment paper. Then, immediately sprinkle the remaining one tablespoon of chopped peanuts on top of them all.
  • Place the sheet pan in the freezer and make sure nothing is covering it. Let the Snickers balls chill until the chocolate is firm and frozen, about 20-30 minutes. Then, enjoy and store leftovers in an airtight container in the refrigerator.

Notes

  • Powdered Peanut Butter: You can use PB2 or PBfit in this recipe.
  • Milk Of Choice: You can use your milk of choice in this recipe. Some great options are unsweetened almond milk, oat milk, 2% milk, 1% milk, or non-fat milk.
  • What Dates To Use: Use Medjool dates for these Snickers balls. Medjool dates are naturally sweet and have a caramel-like texture. You can buy pitted Medjool dates or remove the pits from the dates yourself.
  • Chop Peanuts: Roughly or finely chop the peanuts for this recipe so they are dispersed evenly throughout the Snickers balls. We like to fold in the peanuts and save a tablespoon to sprinkle on top once the balls are coated in chocolate.
