- Add the PB2 or PBfit powdered peanut butter and pitted Medjool dates to a high-powered food processor with an S-shaped blade. Turn the food processor on high and pulse until combined. At the same time, pour the milk into the food processor gradually to help the ingredients come together. Continue to pulse and combine the ingredients.
- Remove the mixture from the food processor and place it in a large bowl. Fold in the roughly chopped peanuts but save one tablespoon to sprinkle on top later.
- Use a one-tablespoon cookie scoop and your hands to roll the mixture into balls. This recipe makes 16-18 Snickers balls.
- Roughly chop the dark chocolate bar so that it is easier to melt. Then, melt the dark chocolate using the double boiler method or melt it in the microwave. Once the chocolate is melted, roll the balls in the chocolate and coat them. Place the balls on a sheet pan with parchment paper.
