First, add the milk and cottage cheese to a blender and blend until smooth.

Also, this sauce is delicious on lentils, spiralized zucchini, and hearts of palm pasta. This spiralizer is great for spiralizing zucchini. Additionally, Palmini Low Carb Pasta or your favorite pasta or pasta substitute will work great. This cottage cheese Alfredo is even a great sauce for pizza!

  • Butter Substitution: We used one teaspoon of Kerrygold butter in this recipe. If you do not want to use this butter, you can substitute it for two teaspoons of the light butter of your choice.
  • Add More Protein: To add even more protein to this dish, you can add grilled chicken breast or some cooked shrimp. Both of these would be delicious with the flavors of the sauce!

This is the one thing I would splurge on because it makes it so good! Get a chunk of parmesan cheese from a parmesan cheese wheel and freshly grate the parmesan cheese when you make this recipe. It’s that good you will thank me later! If you need to substitute it, you can use grated parmesan, but it will not have as much flavor as freshly grated parmesan. We used this parmesan cheese grater.

Use Fresh Garlic Cloves

Make sure to use fresh garlic cloves in this recipe. Crush them and add them to the pan with the butter. Saute the garlic with the butter and then add the rest of the ingredients. Fresh crushed garlic adds so much flavor to the sauce!

Blend Until Smooth

Thoroughly blend the milk and cottage cheese in a blender until smooth. You don’t want any clumps of unblended cottage cheese in your sauce.

Save Some Pasta Water

Save some of the pasta water that you used to cook your pasta in. If your Alfredo sauce gets too thick or you would like to make the sauce thinner, you can add some pasta water to the pan with the sauce and mix.

This cottage cheese Alfredo sauce is so decadent and creamy. Add it to your favorite pasta or pasta substitute and you will have the best pasta or fettuccine Alfredo ever!

Ingredients

  • 1/2 CUP 2% milk

  • 1 ½ CUPS fat-free cottage cheese

  • 1 TSP Kerrygold pure Irish butter

  • 1 large garlic clove, crushed

  • 1/4 TSP salt

  • 1/4 TSP black pepper or to taste

  • 1 TSP Italian herbs, we used Gourmet Garden

  • 1 ⅓ oz freshly grated parmesan cheese

  • 1 ½ TSP cornstarch

Directions

  • Add the milk and cottage cheese to a blender and blend until smooth.
  • Add the butter to a pan over low heat on the stove. Then, crush the garlic clove into the pan. Saute the garlic with the butter on low.
  • Add the blended cottage cheese mixture to the pan. Then, add the salt, pepper, Italian herbs, and freshly grated parmesan cheese. Stir and combine the ingredients. Also, make sure the heat is not too high, you don’t want to burn the sauce. Cook everything on low so the cottage cheese doesn’t separate or become grainy.
  • Continue to stir until you have a low simmer. At this point, add the cornstarch and continue to mix until the sauce thickens up.
  • Boil your favorite pasta, drain the pasta, add it to the pan with the sauce, and enjoy!

    3. Hi Shawna, I plan to make this recipe with my homemade cottage cheese (which has turned out a bit extra dry). And want to replace the Parmesan with Cottage Cheese too. Do I take an equal amount of cottage cheese as a substitute? Any change in the proportions of the other ingredients? Would adding in 1/4 Tsp nutritional yeast help to improve the flavor as I’m skipping the Parmesan.

      • Hello, thanks for the question, I am excited that you are looking forward to trying the cottage cheese Alfredo! Since your homemade cottage cheese turned out more dry than store-bought cottage cheese you may need to add more milk so there is enough liquid. Also, make sure to heat the sauce over very low heat so the cottage cheese doesn’t separate or become watery. This step is very important so the sauce stays together. Also, great idea to use nutritional yeast! Instead of adding more cottage cheese to replace the Parmesan, just add some nutritional yeast. To replace the 1 ⅓ ounces of Parmesan cheese, I would try using about 3-4 tablespoons of nutritional yeast. You may want to adjust the amount you add to taste as it has a different flavor profile.
