Hi Shawna, I plan to make this recipe with my homemade cottage cheese (which has turned out a bit extra dry). And want to replace the Parmesan with Cottage Cheese too. Do I take an equal amount of cottage cheese as a substitute? Any change in the proportions of the other ingredients? Since your homemade cottage cheese turned out more dry than store-bought cottage cheese you may need to add more milk so there is enough liquid. Also, make sure to heat the sauce over very low heat so the cottage cheese doesn’t separate or become watery. This step is very important so the sauce stays together. Also, great idea to use nutritional yeast! Instead of adding more cottage cheese to replace the Parmesan, just add some nutritional yeast. To replace the 1 ⅓ ounces of Parmesan cheese, I would try using about 3-4 tablespoons of nutritional yeast. You may want to adjust the amount you add to taste as it has a different flavor profile.
