What Tater Tots To Use?

We used 1/2 cup of Trader Joe’s light cheese blend. Fat-free cheese, light mozzarella, and light cheddar will also work.

What Herbs To Use?

We love to use fresh herbs whenever possible as they uplevel the dish. If you don’t have fresh herbs, feel free to use dried herbs, just use half of the amount. This recipe calls for rosemary, thyme, and oregano.

Substitutions For Mushrooms

We used one box of cremini mushrooms in this recipe. The mushrooms are sauteed in the pan. You can use 8 ounces of corn, broccoli, cauliflower, white mushrooms, or mixed veggies instead if you prefer.

If you don’t have the cream of mushroom soup, you can make this tater tot casserole with cream of chicken soup.

We used ground turkey breast in this tater tot casserole. Lean ground beef or ground turkey will work, as well.

How To Make Healthy Tater Tot Casserole

First, slice the cremini mushrooms and dice the onion. Then, finely chop the fresh rosemary, thyme, and oregano.

After that, lightly spray a pan with olive oil spray. Then, add mushrooms, onions, herbs, garlic, salt, pepper, and Worcestershire sauce to the pan.

Saute until the onions are translucent and the mushrooms are cooked.

Next, move everything to one side of the pan. After that, add your ground turkey breast to the pan. Season both sides of the ground turkey with salt and pepper.

Fully cook the turkey and combine it with the sauteed mixture.

Then, whisk together the cream of mushroom soup and milk. After that, add this to the pan and combine all of the ingredients.

Next, add everything from the pan to an oven-safe baking dish. Then, sprinkle the light cheddar cheese on top of the casserole.

What To Serve With Tater Tot Casserole

Once baked, let the tater tot casserole slightly cool before serving. Transfer some of the casserole to a plate and enjoy! As an option, you can add some ketchup or hot sauce on top. This would be delicious with our apple cabbage salad or our brussels sprout salad.

How To Store Casserole

This tater tot casserole is best enjoyed warm out of the oven but any leftovers can be easily stored and enjoyed later. Store the leftovers in an airtight container in the refrigerator. They will last 2-3 days in the refrigerator. Then, reheat them in an oven-safe dish in the oven before enjoying again.

This healthy tater tot casserole is so good and packed with the classic creamy cheesy flavors you crave. It is lightened up and made with ground turkey.

Ingredients

  • 1 box of cremini mushrooms, 8 oz

  • 1 medium-sized white or sweet onion

  • 1/2 TSP chopped fresh rosemary

  • 1/2 TSP chopped fresh thyme

  • 1/2 TSP chopped fresh oregano

  • 2 cloves garlic, crushed

  • 1/2 TSP salt

  • 1/4 TSP pepper

  • 2 TSP Worcestershire sauce

  • 1 lb ground turkey breast

  • 1, 10.5 oz can semi-condensed or condensed cream of mushroom soup

  • 2 TBSP milk

  • 1/2 CUP light cheese blend

  • 27 frozen tater tots

Directions

  • Slice the cremini mushrooms and dice the onion. Then, finely chop the fresh rosemary, thyme, and oregano.
  • Lightly spray a pan with olive oil spray. Add the mushrooms, onions, herbs, garlic, salt, pepper, and Worcestershire sauce to the pan. Saute until the onions are translucent and the mushrooms are cooked.
  • Move everything to one side of the pan to make room for the ground turkey. Add your ground turkey breast to the pan. Season both sides of the ground turkey with salt and pepper. Start to cook the turkey and use a spatula to separate it into tiny pieces. Then, combine the sauteed mixture until the turkey is fully cooked.
  • Whisk together the cream of mushroom soup and milk. Add this to the pan once the turkey is fully cooked. After that, combine all of the ingredients in the pan.
  • Transfer everything from the pan to an 11×7 oven-safe baking dish.
  • Sprinkle the light cheddar cheese on top of the casserole.
  • Top with the frozen tater tots. Bake the casserole at 400 degrees F for 20-25 minutes and enjoy!
