How To Make Shaved Brussels Sprout Salad

First, rough chop the dried sweetened cranberries and pecans. Then, chop the apples into small pieces.

Next, cut both ends of the onion off and remove the skin. After that, carefully shave the onion into thin pieces.

Then, cut the ends off of the brussels sprouts and carefully shave them. Carefully use a mandoline with a guard or use a food processor.

This is the ultimate shaved brussels sprout salad! It’s so perfect with crunchy apples, dried sweet cranberries, salty feta, pecans, and a honey lemon dressing.

Ingredients

  • 1 lb shaved brussels sprouts, see options in the post

  • 1/3 CUP dried sweetened cranberries, rough chopped

  • 2 medium-sized pink lady apples, chopped

  • 8 oz light feta

  • 1 small red onion, shaved thin

  • 1/4 CUP pecans, rough chopped

  • 3 TBSP lemon juice

  • 2 TBSP olive oil

  • 1 TSP garlic, 1-2 cloves

  • 2 TSP stone-ground mustard

  • 1 TBSP honey

  • 1/4 TSP salt

  • 1/8 TSP pepper

Directions

  • Rough chop the dried sweetened cranberries and pecans. After that, wash and dry the apples. Then, chop the apples into small pieces.

  • Add the shaved brussels sprouts, chopped apples, chopped dried cranberries, chopped pecans, shaved red onions, and light feta to a large bowl.
  • To make the dressing, add the lemon juice, olive oil, garlic, stone-ground mustard, honey, salt, and pepper to a bowl. Thoroughly combine these ingredients.
