I absolutely love these healthy chicken and cheese enchiladas! Cheese enchiladas are my favorite Mexican dish, but they are high in fat and calories so I don’t have them that often. However, I was really craving them and that is why I have created a healthier version of classic cheese enchiladas with a twist and lightened them up.
I’ve added ground chicken breast to make them more filling and satisfying. Also, by using the ground chicken breast, you don’t have to use as much cheese and it adds protein and reduces the calories and fat in the dish. Additionally, using a light or fat-free cheddar cheese lightens these up even more! Whether you are doing whole 30, Keto, low fat, WW, or gluten-free this healthy chicken and cheese enchilada recipe is going to hit the spot. There’s nothing not to love about these delicious chicken and cheese enchiladas!

How to Make Healthy Chicken and Cheese Enchiladas
To make these healthy chicken and cheese enchiladas, start by chopping the green onions. The white parts of the green onion will be cooked in the pan, while the green parts will be used to garnish on top. Then, chop an onion into tiny pieces.


Heat a large pan and spray it lightly with oil. Sauté the onions in the pan until they are translucent. Then, move the onions to one side of the pan and add the ground chicken breast. Season the chicken breast with salt, pepper, garlic powder, and taco seasoning. Break up the chicken into smaller pieces and make sure it is thoroughly cooked.


After the ground chicken is cooked, it’s time to assemble the enchiladas! Cut the tortillas so they fit in the baking dish. Then, add enchilada sauce to the baking dish and make sure it covers the entire bottom of the dish. After that, cover the sauce with tortillas. Next, add the chicken, some more sauce, some cheese, and add another layer of tortillas. Then, add more enchilada sauce to the top of the tortillas. Make sure to cover the tortillas with sauce so they don’t dry out or burn in the oven. Then, add chicken and cheese, more tortillas, the rest of the enchilada sauce, and cheese.




After that, add tinfoil to the top of the baking dish and bake at 350 degrees F for 35-40 minutes. Top the enchiladas with the green parts of the green onion and some fresh cilantro. Enjoy!


Don’t Let the Tortillas Dry Out in the Oven When Making Enchiladas
It’s important to completely cover the tortillas with the enchilada sauce when you’re assembling the enchiladas. This will ensure that the tortillas won’t dry out or burn in the oven.
