Ingredients

  • 1 TBSP toasted sesame oil

  • 1/2 CUP diced sweet or white onion

  • 1 TSP fresh ginger

  • 2 cloves of fresh garlic (about 2 TSP)

  • 3-4 green onions (cook the white parts only)

  • 1 LB ground chicken or turkey breast

  • salt

  • pepper

  • 1 CUP shredded carrots

  • 1 bag of shredded coleslaw mix

  • 1 CUP fresh bean sprouts

  • 1/4 CUP low sodium soy sauce or coconut aminos

  • 1 TBSP rice wine vinegar

  • fresh cilantro

  • Optional: 1 TBSP sriracha

Directions

  • Start by prepping the ingredients for the egg roll in a bowl. First, dice the onion into small pieces.
  • Then, wash the fresh ginger and peel it with a potato peeler or a spoon. Remove the skin from the ginger that you are going to grate. After that, finely grate the ginger. If you don’t have fresh ginger you can use frozen cubes of ginger.
  • Chop the green onions. Separate the white and green parts of the green onions. The white part of the green onion will be cooked while the green part will be used to garnish.
  • Crush two cloves of fresh garlic. If you don’t have fresh garlic, you can use 2 TSP of jarred or frozen garlic.
  • Pick some cilantro leaves. Make sure to remove the cilantro leaves from the stems because the stems are bitter. Then, chop up the cilantro leaves.
  • Now that all of the ingredients are prepped, heat a large pan on the stove. Add the toasted sesame oil to the heated pan. Then, add the white or sweet onion, freshly grated ginger, fresh garlic, and the white parts of the green onion to the pan. Saute all of the ingredients in the pan with the toasted sesame oil until all of the ingredients are thoroughly cooked. Make sure to evenly combine the ingredients and continue to saute until the onions are translucent. Then, move the ingredients to one side of the pan.
  • Add the ground chicken breast to the pan and break it up into small pieces with a spatula. Season the ground chicken breast with some salt and pepper. Once the ground chicken breast starts cooking combine it with the onions. Make sure the chicken breast is thoroughly cooked and in small pieces. Continue to cook it until all of the ground chicken or turkey breast is browned.
  • Once the ground chicken breast is thoroughly cooked, add the shredded carrots, coleslaw mix, fresh bean sprouts, low sodium soy sauce, and rice wine vinegar to the pan. Then, thoroughly combine all of the ingredients. The coleslaw mix will shrink a little bit after it has been cooked. Let the ingredients cook for 3-5 minutes. If you want an extra kick, feel free to add some sriracha sauce and combine it in. Top this egg roll in a bowl with some of the green parts of the green onion and fresh cilantro. Enjoy!
