How To Make This Healthy White Bean Chicken Chili

Ingredients for healthy white bean chicken chili

First, start by turning on your pan to medium heat and lightly spray it with oil. Avocado oil is a great option because it handles high heat well. Then, add your chopped onion to a heated pan and saute it. The onion will be translucent when it’s done cooking. Next, add your chicken breast or two boneless skinless chicken breasts cut into cubes to the pan. Then, season with salt, pepper, and garlic. Make sure to cook your chicken thoroughly. Once your chicken is thoroughly cooked and browned, separate the chicken into tiny pieces and incorporate the onions.

Then, transfer it all to a slow cooker or stockpot. After that, add the corn, white beans, tomatillo salsa, and pour the chicken stock on top. Then, add the cumin, oregano, and coriander. Mix all of the ingredients and then cook on normal for 30 minutes to 2 hours depending on when you want to eat it.

Chop up some fresh cilantro and sprinkle it on top of the chili. Then, add a splash of fresh lime and enjoy!

Also, the fresh herbs elevate the flavor and make it super fresh and delicious! Additionally, using fresh lime in this dish brings bright acidity and even more flavor.

Ingredients

  • 1 white or sweet onion

  • 1 lb ground chicken breast or 2 boneless skinless chicken breasts cut into small cubes

  • salt, pepper, garlic

  • 1 can or 16 oz frozen corn

  • 2 cans great northern white beans

  • 16 oz tomatillo salsa

  • 1 quart chicken stock

  • 1 tsp cumin

  • 1 tsp oregano

  • 1 tsp coriander

  • fresh chopped cilantro

  • a splash of lime

Directions

  • Turn on your large pan to medium heat and lightly spray it with oil. Avocado oil is a great option as it handles high heat well.
  • Once the pan is heated up, add in your chopped onion and saute it. The onion will be translucent when it’s done cooking.
  • Add your ground chicken breast or two boneless skinless chicken breasts cut into cubes to the pan and season with salt, pepper, and garlic powder.
  • Thoroughly cook and brown your chicken. Separate the chicken into tiny pieces and incorporate the onions.
  • Once everything is cooked, transfer to a slow cooker or stockpot.
  • Add the corn, white beans, tomatillo salsa, and pour the chicken stock on top. Then, add the cumin, oregano, and coriander.
  • Mix all of the ingredients. Cook on normal for 30 minutes to two hours depending on when you want to eat it.
  • Chop up the fresh cilantro and sprinkle on top of the chili. Then, add a splash of fresh lime. If you like things extra spicy consider chopping up some fresh jalapeños to add on top. Enjoy!
