This green chili chicken is a high-protein meal. It is low in fat and packed with protein from the chicken and beans.
Ingredients For Green Chili Slow Cooker Chicken

- Chicken: Use 1.5 pounds of boneless skinless chicken breasts.
- Seasonings: Season the chicken with salt, pepper, and garlic powder.
- Corn: Use one bag of frozen corn.
- Beans: Use one can of Great Northern beans.
- Onion: Dice one small medium-sized sweet onion.
- Green Chiles: One small can of fire-roasted diced green chiles.
- Salsa Verde: One jar adds flavor to the chicken.
- Chicken Broth: Use low-sodium chicken broth in this recipe.
What Onion To Use
We used a sweet onion in this recipe. You can use a medium-sized white, brown, or sweet onion in this recipe. The onion will be diced.
Why Add Green Chiles?
Green chiles add flavor and dimension to slow cooker chicken.
What Salsa Verde To Use?
Use your favorite jar of salsa verde in this recipe. We used the 12-ounce jar of salsa verde from Trader Joe’s.
How To Make Green Chili Slow Cooker Chicken
First, season both sides of the chicken with salt, pepper, and garlic powder. Then, add the chicken to the slow cooker.
Next, add the frozen corn, rinsed and drained Great Northern beans, diced onion, fire-roasted green chiles, salsa verde, and chicken broth to the slow cooker.

After that, lightly mix everything and put a lid on the slow cooker. Cook the chicken on low, until fully cooked.

Then, shred the chicken on a cutting board with two forks. Next, place the chicken back in the slow cooker and mix. After that, put a lid on the slow cooker to keep everything warm.
What Slow Cooker To Use
This green chili chicken is cooked in a slow cooker. This makes it super easy! We used this slow cooker because the coating is free of PFAS, PFOA, cadmium, and lead.
How To Serve Slow Cooker Chicken
- Make chicken bowls with shredded green chili chicken. Top the chicken bowls with cheddar cheese, sliced green onions, chopped cilantro, and a squeeze of lime.
- Serve this chicken with cooked brown rice or cauliflower rice.

How To Reheat Slow Cooker Chicken
To reheat this green chili chicken from the freezer, place it in the refrigerator overnight. Then, place the chicken in a saucepan over medium heat on the stove. Mix the chicken until warmed, transfer it to a plate or bowl, add your favorite toppings, and enjoy. Or, you can transfer the chicken to a microwave-safe dish and heat it up in the microwave.

GREEN CHILI SLOW COOKER CHICKEN

Equipment
Ingredients
- 1.5 pounds boneless skinless chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon garlic powder
- 16 ounces frozen corn
- 1, 15.5 ounce can of Great Northern beans
- 1 medium-sized sweet onion
- 4 ounces fire-roasted diced green chiles, 1 small can
- 12-16 ounces of your favorite salsa verde, 1 jar
- 1 cup low-sodium chicken broth
- cilantro, green onions, lime, optional
Instructions
- Rinse and drain the Great Northern beans. After that, dice the onion.
- Season both sides of the chicken with salt, pepper, and garlic powder. Then, add the chicken to the slow cooker.
- Add the frozen corn, Great Northern beans, onion, fire-roasted green chiles, salsa verde, and chicken broth to the slow cooker.
- Lightly mix everything and put a lid on the slow cooker. Cook everything on low in the slow cooker for 2.5-3 hours or until the chicken is fully cooked. Chicken is fully cooked when it reaches an internal temperature of 165℉.
- Once the chicken is fully cooked, remove it from the slow cooker and place it on a cutting board. Then, use two forks to shred the chicken. Then, place it back in the slow cooker. Mix everything in the slow cooker and put the lid back on to keep it warm.
- When you are ready to serve, top with sliced green onions, chopped cilantro, and a squeeze of lime.
