Ingredients

  • 2 lbs carrots, peeled and shredded

  • 1/4 CUP sliced green onions, about 3-4 green onions

  • 1 bunch of chopped cilantro or flat-leaf parsley, about 1/2 CUP chopped

  • 2 medium apples, we used pink lady apples

  • Optional: 1/4 CUP raisins or cranberries, chopped

  • Optional: 1/4 CUP sunflower seeds, walnuts, or almonds

  • For The Dressing
  • 2 TBSP olive oil

  • 2 TBSP lemon juice

  • 1 TBSP honey

  • 1/2 TSP stone-ground mustard or dijon mustard

  • 1/2 TSP salt

  • 1/4 TSP pepper
