One of my favorite parts of traveling is discovering new flavors. On a recent trip to Sedona, I found a raw juice café with the most incredible carrot salad.       Hi Eileen, you can completely omit the shredded coconut, no problem. You don’t have to replace it with anything, but if you want to swap it with something, you could add in roughly chopped dried cranberries, chopped pitted Medjool dates for sweetness, or add an extra 1/4 cup of shredded carrots for a similar texture.
