My favorite childhood breakfast was the strawberry crepes my mom would make. This strawberry crepes recipe was inspired by my memories of that breakfast. I wanted to lighten up this recipe so I could enjoy it all of the time. I absolutely love these strawberry crepes! They are made with oats, they are healthier than regular crepes, and are gluten-free and dairy-free! They are a little thicker than regular crepes but oh so yummy.

What Are Crepes?
Crepes are very thin pancakes. Crepes originated in France and are usually made sweet or savory. Also, they are usually served for breakfast. We made healthier crepes and filled them with strawberries!
Are Crepes Gluten Free?
These strawberry crepes are gluten-free and made with oats. To make these crepes gluten-free make sure to use gluten-free rolled oats.
How To Make Easy Strawberry Crepes
First, add the rolled oats to a blender and blend them to make oat flour. Then, add the unsweetened vanilla almond milk or milk of your choice, vanilla extract, and salt to the blender. After that, thoroughly blend these ingredients. Then, lightly pulse in the eggs.
Add the fresh or frozen strawberries and sweetener of your choice to a saucepan. Place the saucepan on the stove and let the strawberries defrost and simmer. Stir them occasionally while making the crepes.
How To Flip Crepes
Crepes can be hard to flip. Since these crepes are thicker, we wanted to make them smaller and easier to flip. First, lightly spray an 8-inch pan with oil over low to medium heat. We used a Misto sprayer to spray coconut oil. Then, add about 2-3 tablespoons of crepe batter to the pan. After that, lift up the pan in a circular motion to cover the entire pan with the batter. Flip the crepes once bubbles have formed in the center. Flip again until both sides are cooked.
What To Put In Crepes
After your crepes are done cooking, add some of the warm strawberries to each one. Then, roll the crepes and top them with some of the strawberry juice. Also, we love topping these crepes with some whipped cream. We used a dairy-free coconut whipped cream for our crepes.
Are Crepes Thin Or Thick?
Traditionally, crepes are extremely thin and delicate. These crepes are a little thicker since they are made with oats. We recommend making these crepes smaller in an 8-inch pan so they are easier to flip. Also, this keeps the crepes from breaking or falling apart. These crepes with strawberries are super delicious!
Are Crepes Healthy?
Oftentimes, crepes are made with butter, oil, flour, eggs, salt, and milk. We have lightened up this recipe and made these strawberry crepes healthier. There is no butter, oil, or flour in this recipe. To make these crepes healthier, we made them with oats. Also, you can use your milk of choice and sweetener for the strawberries.

You can use your milk of choice for this crepe recipe. We used no sugar added unsweetened vanilla almond milk in this recipe. Using almond milk makes this recipe dairy-free!

To sweeten the strawberries, use one tablespoon of your favorite sweetener. We used one tablespoon of sugar in this recipe. Also, honey can be used to sweeten the strawberry sauce.
