  • Raspberries: Lightly mash the raspberries so the oats absorb some of the liquid.
  • Vanilla Extract: Just a splash for flavor.
  • Sweetener: Use your sweetener of choice in this recipe.

Yes, you can make overnight oats with frozen raspberries. Just lightly mash the frozen raspberries with vanilla extract and monk fruit before adding them to your jar. The raspberries will defrost in the jar when placed in the refrigerator overnight.

Ingredients

  • 1/3 CUP 1/3 rolled oats

  • 3 TBSP 3 unsweetened vanilla almond milk or milk of choice

  • 1 TSP 1 chia seeds

  • 1/3 CUP 1/3 raspberries

  • 1/4 TSP 1/4 vanilla extract

  • 2 TSP 2 sweetener of choice

Directions

  • Wash and dry the raspberries. Then, add the raspberries, vanilla extract, and sweetener of choice to a bowl or the bottom of the jar you are using to make the overnight oats. Lightly mash the raspberries with a fork to release some of the juices.
  • Add the lightly mashed raspberry mixture, rolled oats, unsweetened vanilla almond milk, and chia seeds to the jar. Mix the ingredients.
  • Put a lid on the jar. Then, place your overnight oats in the refrigerator overnight.
  • Mix the ingredients before eating, add your favorite toppings, and enjoy!
