How To Make This Chicken Salad With Grapes and Tarragon

Start by washing and drying the celery. Then, chop up the celery into small pieces. Next, cut the green onions into small pieces. After that, add the chopped celery and green onions to a large bowl.

After that, add the canned chicken or chicken breast to the bowl with the chopped celery and green onions.

After that, cut your grapes in half and finely chop your tarragon. This chicken salad is delicious because of the amazing flavor the grapes and tarragon add! We always add extra grapes because they add so much flavor. Also, the tarragon is amazing in this salad because it adds amazing flavor and elevates the complexity of the dish. The tarragon adds so much to this chicken salad and you don’t want to leave it out!

Next, add the grapes and tarragon to the bowl. Make the sauce and add it to the bowl as well. Thoroughly mix all of the ingredients and enjoy!

Freeze Your Tarragon

For this recipe, use fresh tarragon if you can. With the leftover tarragon, you can put it in an ice cube tray with a little bit of water and freeze it. This is great because no tarragon goes to waste and you can use it the next time you make this chicken salad or for another recipe that calls for tarragon. Keep in mind that you will need to add a little more tarragon if you freeze it because the flavor isn’t as strong as fresh tarragon.

Ingredients 

  • 1 cup fully cooked cubed chicken breast (one chicken breast or canned chicken breast)
  • 2-4 stalks of celery
  • 2 green onions
  • 3/4-1 ½ cups grapes
  • 1/2-1 teaspoon chopped tarragon

SAUCE:

  • 1/2 cup 0-fat Greek yogurt
  • 1 tablespoon light mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon stone-ground mustard
  • 2 teaspoons fresh lime juice
  • salt and pepper to taste

Instructions 

  • Wash and dry your celery. Chop up the celery into small pieces.
  • Add your chicken breast or canned chicken to a bowl with the celery.
  • Cut the green onions into small pieces and then add them to the bowl.
  • Finely chop the tarragon and add it to the bowl.
  • Cut your grapes in half and add them to the bowl.
  • Start making the sauce by combining the 0-fat Greek yogurt, light mayonnaise, garlic powder, stone ground mustard, salt, and pepper. Thoroughly mix all of those ingredients.
  • Squeeze a lime and add 2 teaspoons of the juice to the sauce. Then, mix the lime in. The lime elevates the flavor of the sauce and is not to be missed!
  • Add the sauce to the bowl and thoroughly mix everything. Enjoy!
