I am so excited to share these easy homemade chocolate bars with you! I love chocolate and we all know that Ella loves chocolate. She was my inspiration to make these delicious homemade chocolate bars. We have been having so much fun getting creative with different chocolate combinations. Once you have the basics down you can really use whatever you want inside. It’s really endless what you can do with this chocolate.

Today we decided to share Ella’s favorite homemade chocolate creation. We like to call it the rocky road chocolate bar! It reminds me of the fudge my mother would make at Christmas time. Also, it was always a favorite of mine as a child as well.

We hope this inspires you to come up with your own chocolate creation or try this one! I really like using the regular-sized chocolate bars from Trader Joe’s. They’re a great size and you can make this chocolate bar whenever a chocolate craving hits.

This recipe makes 8 pieces of chocolate and each piece is super delicious and satisfying. They are 50 calories per piece, and if you’re following WW, they are two points each on all plans! This works perfectly for us so we don’t go crazy! Additionally, we will show you how to maximize the flavor in the chocolate bar without adding a lot of extra calories! How To Make Easy Homemade Chocolate Bars

Ingredients for the Easy Homemade Chocolate Bars

To start, gather the mini marshmallows and chop the almonds into small pieces so they are ready to go once the chocolate is melted. Chopping the almonds will ensure you get a piece of almond in every bite and save calories. Next, finely chop your chocolate bar. Then, fill a saucepan with about one to two inches of water and bring it to a boil on the stove. After that, put a heat-resistant bowl on top of the saucepan with boiling water and reduce it to a simmer.

Next, pour the chopped chocolate into the heat-resistant bowl and mix. Make sure to mix the chocolate the entire time. Remove the bowl from the stove when there are a few chunks of chocolate left so you don’t burn the chocolate. Then, continue to mix the chocolate until it is smooth and all of the chocolate is melted.

Next, add the mini marshmallows and chopped almonds to the bowl with the melted chocolate. Then, thoroughly combine all of the ingredients in the bowl. After that, put a piece of parchment paper on top of a sheet pan. Then, pour the chocolate mixture onto the parchment paper. Make sure to get all of the delicious chocolate out of the bowl. Also, make sure to flatten and spread the chocolate out on the parchment paper. This is optional, but feel free to add finishing sea salt to the chocolate bar. It is such a great addition if you like sea salt!

Let the chocolate cool on the parchment paper for an hour at room temperature. Or, put it in the refrigerator in a sealed container with parchment paper for 10-20 minutes. Also, you could put the melted chocolate in the freezer for 5-10 minutes to harden quickly.

After the chocolate is hardened, remove it from the parchment paper and cut it into eight pieces. Enjoy!

A Few Notes & Tips

Which Chocolate is the Best For Melting?

I find that high-quality chocolate bars are the best for melting. I have had great success with the Ghirardelli melting wafers and Trader Joe’s chocolate bars. If you want a sugar-free chocolate option, Lily’s chocolate bars work perfectly as well. Additionally, keep in mind that dark chocolate takes a little longer to melt than white chocolate.

How To Melt The Chocolate In The Microwave for These Easy Homemade Chocolate Bars

I like to use Ghirardelli chocolate melting wafers on the stovetop or in the microwave. To melt them in the microwave, take 20 melting wafers and heat them in a microwave-safe container at ½ the power or the defrost setting for 30 seconds. Then, take them out of the microwave and be careful because the chocolates may be hot. The chocolate wafers should be partially melted but not all the way melted. Stir thoroughly until all of the wafers are melted. If they’re not completely melted after stirring, microwave them for an additional 15 seconds and continue to stir them until all the chocolate is melted and smooth. However, you want to make sure you don’t overcook the chocolate, and the best way to do that is to take it out after 30 seconds and stir it first.

Can You Burn Chocolate in the Microwave?

Yes, that is why it is important to melt the chocolate on ½ power or the defrost setting for 30 seconds only. Then, mix the chocolate, and if it still needs melting add an additional 15 seconds. However, it is best to take the chocolate out after 30 seconds and stir.

What is a Double Boiler?

Somehow this always sounded mysterious to me! But, it’s just a saucepan, heat-resistant bowl, and some water! The saucepan is filled with about 1 to two inches of water and put on the stovetop to boil. Once the water is boiling, it is reduced to a small simmer and then you add a heat-resistant bowl. In this case, you would pour in the chocolate and start stirring it with a spatula. Make sure to mix the chocolate with either a silicone spatula or a metal whisk, don’t use a wooden spoon because it can hold moisture. Once most of the chocolate has mostly melted, take it off the heat and continue stirring until the rest of the chocolate has melted. Keeping the chocolate on the stove until all of it is melted could burn the chocolate and that would make it grainy in texture and seize up. 

Don’t Get Water in These Easy Homemade Chocolate Bars

It is important to note that if any water gets into your chocolate when melting it, the chocolate will seize up! So, be mindful when taking the bowl off the heat. I like to place the bowl on a kitchen towel because there will be moisture from the water stuck to the bottom of the bowl. 

What Makes Chocolate Seize?

Burning your chocolate either in the microwave or on the stove will cause your chocolate to seize. Also, keeping it on the stove until all of the chocolates are melted could burn the chocolate. That would make it grainy in texture. Additionally, melting the chocolates in the microwave for over 30 seconds at one time can cause them to burn and seize. So, just be mindful with both options to make sure that you take the chocolate off the heat when there are still small bits of chocolate to melt and finish melting the chocolate off the heat. This will avoid the chocolate seizing or burning.

What To Do If Your Chocolate Seizes

The way to fix the chocolate if it has seized is by adding a little bit of vegetable oil or melted butter. Or, you can add water, but I find the other two methods work better and water already got you into this mess! Then, you would stir continuously until the chocolate becomes smooth. The only bummer is that the chocolate will need to be used for something else.

  • 14-15 raw almonds (15 grams or 1/2 oz)

  • Optional: Add some finishing sea salt to the top (we like Jacobsen salts)

      • I put my chocolate on a small sheet pan. I would say 12 x 9 if you are looking for dimensions. Just something large enough so that you can spread out the chocolate. We hope you enjoy! 🙂
