We love using sweet onions because of their mild yet sweet flavor. You can use sweet, brown, or white onions. Or, use a mix of all three. Use three medium-sized onions for this recipe. For the mushrooms, use cremini mushrooms, also known as baby Bella mushrooms. They add so much flavor and are the perfect size for this recipe.

How To Make Caramelized Onions With Mushrooms

Step 1: Cut each onion in half. Then, slice across into 1/4-inch slices.

Step 2: Remove any dirt from the mushrooms and the bottom of the stem. Then, evenly and thinly slice the mushrooms.

Step 3: Add the olive oil, sliced onions, sliced mushrooms, salt, pepper, and thyme sprigs to a large skillet over low heat on the stove.

Step 4: Let the mushrooms cook and the onions caramelize on low for at least 45 minutes to an hour. Move them around periodically so they don’t burn.

Step 5: Once the onions are caramelized and the mushrooms are cooked, carefully remove the thyme sprigs from the pan and add the crushed garlic. Cook the garlic in the pan. After that, use your spatula to deglaze the pan and get any brown bits off the bottom.

Step 7: Once done, let the caramelized onions with mushrooms slightly cool. Then, top with goat cheese, fresh thyme, and chopped flat-leaf parsley.

Ingredients

  • 3 medium-sized sweet onions, sliced

  • 16 ounces cremini mushrooms, sliced

  • 2 teaspoons olive oil

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

  • 2-3 sprigs of fresh thyme

  • 2 cloves of fresh garlic, crushed

  • 1 teaspoon balsamic glaze

  • 1 oz goat cheese, optional

  • fresh flat-leaf parsley, optional

Directions

  • Cut each onion in half and then slice it into 1/4-inch pieces.
  • Dust any dirt off the cremini mushrooms and cut the bottom of the stems off. Then, thinly and evenly slice the mushrooms.
  • Add the olive oil, sliced onions, sliced mushrooms, salt, pepper, and thyme sprigs to a large skillet over low heat on the stove.
  • Let the mushrooms cook and the onions caramelize on low for at least 45 minutes to an hour, moving them around periodically, about every 5-7 minutes, so they don’t burn.
  • The onions are caramelized when they are golden brown, and the mushrooms are done when they have shrunk in size. Carefully remove the thyme sprigs from the pan and add the crushed garlic. Cook the garlic in the pan. Then, use your spatula to deglaze the pan and get any brown bits off the bottom.
