  • 5-6 CUPS 5-6 of broccoli, about 2 large heads of broccoli

  • 1/2 CUP 1/2 red onion

  • 1/4 CUP 1/4 dried cranberries

  • 1/4 CUP 1/4 fresh flat-leaf parsley or cilantro

  • 3 TBSP 3 roasted and salted sunflower seeds

  • For The Dressing
  • 1 CUP 1 0-fat greek yogurt

  • 1 TBSP 1 champagne vinegar

  • 1 TBSP 1 maple syrup

  • 1 TSP 1 toasted sesame oil

  • 1 TSP 1 garlic powder

  • 1/2 TSP 1/2 salt

  • 1/4 TSP 1/4 pepper

Directions

  • Wash and dry the broccoli. Then, chop the broccoli florets into small, bite-sized pieces. Next, dice the red onion, finely chop the cranberries, and chop the parsley.
