Honestly, it’s one of those dishes I can never resist. I wanted a lighter, healthier version I could whip up anytime at home.

So, I created these easy Thai chicken lettuce wraps with a homemade peanut sauce that’s just as rich and flavorful but without all the extra calories. And let me tell you, they are so satisfying, ridiculously simple to make, and packed with vibrant, fresh flavors. Trust me, you’re going to want to make these on repeat!

Ingredients 

For The Chicken Lettuce Wraps

  • 16 ounces grilled cooked chicken, rotisserie chicken, or our slow cooker chicken
  • 1 cup seeded and diced English cucumber

  • 1 tablespoon fresh lime juice
  • 1 garlic clove, crushed
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar
  • 1 teaspoon low-sodium soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated fresh ginger

Instructions
