Ingredients

  • For The Mug Cake
  • 3 TBSP flour

  • 1/2 TSP baking powder

  • 1/2 TSP cinnamon

  • 2 TSP sugar or monk fruit

  • pinch of salt

  • 1 TBSP 0-fat Greek yogurt

  • 2 TBSP unsweetened vanilla almond milk or milk of choice

  • 1/2 TSP vanilla extract

  • For The Icing
  • 1 TBSP powdered monk fruit sweetener or powdered sugar

  • 2 drops of your milk of choice

  • 2 drops of vanilla extract

Directions

  • Preheat your oven to 350 degrees F. After that, sift the flour into a large bowl so your mug cake doesn’t have any lumps.
  • Add the baking powder, cinnamon, sugar, and pinch of salt to the large bowl with the sifted flour. Lightly mix these ingredients.
  • Add the 0-fat Greek yogurt, your milk of choice, and vanilla extract to the large bowl. Combine all of the ingredients together, but make sure not to overmix the batter.
  • Lightly spray your oven-safe ramekin with coconut oil or your oil of choice. Then, pour the batter into the ramekin.
  • Place the oven-safe ramekin on a baking pan and place it in the oven. Bake the cinnamon roll mug cake at 350 degrees F for 15-18 minutes. It is done when a toothpick comes out clean from the center.
  • To make the icing, add the Lakanto powdered monk fruit sweetener or powdered sugar, milk of choice, and vanilla extract to a bowl. Mix these ingredients together. Once the cake is cooked let it slightly cool and drizzle the icing on top!
