This Mexican meatloaf is easy to make! First, dice the onion. Then, lightly spray a pan with olive oil and sauté the onions. Also, crush the cloves of garlic and add them to the pan.

Next, add the ground turkey breast, cooked onions and garlic, corn, black or pinto beans, oat flour, taco seasoning, eggs, and 1/4 cup of the red salsa to a large bowl.

After that, thoroughly combine these ingredients in the bowl. Then, form the meatloaf on a sheet pan with parchment paper, add the remaining salsa on top of the meatloaf, and cook it.

This is the best easy Mexican meatloaf recipe with salsa! It is packed with incredible flavors from taco seasoning, red salsa, and melted cheddar cheese.

Ingredients

  • 1/3 CUP blended rolled oats or oat flour

  • 1 chopped medium white onion

  • 2 cloves garlic, crushed

  • 1 pound ground turkey breast

  • 1 CUP corn

  • 15 oz can of black or pinto beans

  • 1 pack of your favorite taco seasoning

  • 2 eggs, whisked

  • 3/4 CUP your favorite red salsa

  • 1/2 CUP light Mexican cheese blend

  • 4 green onions, sliced

  • 2 TBSP fresh cilantro, chopped

Directions

  • Add the rolled oats to a blender and blend them to make oat flour.
  • Dice the white onion. After that, lightly spray a pan with olive oil over medium heat and sauté the onions. When the onions are almost done cooking, crush the cloves of garlic and add them to the pan. The onions are done cooking when they are translucent.
  • Add the ground turkey breast, cooked onions and garlic, corn, black or pinto beans, oat flour, taco seasoning, eggs, and 1/4 cup of the red salsa to a large bowl. The rest of the salsa will go on top of the meatloaf. Thoroughly combine these ingredients in the bowl.
  • Form a 2-3 inch high meatloaf on a sheet pan with parchment paper. Add the remaining 1/2 cup of red salsa on top of the meatloaf.
  • Cook the meatloaf at 350 degrees F for 40-50 minutes, or until cooked through.
  • Once cooked, sprinkle the light Mexican cheese blend on top. Bake the meatloaf for up to five more minutes or until the cheese is melted.
  • When the Mexican meatloaf is done, sprinkle the green onions and cilantro on top and enjoy! Serve with extra salsa on the side if desired. We were able to get 8 slices that were about 1.5 – 2 inches each from this meatloaf.

      I have made a few of your recipes – peanut butter cookies, pumpkin cookies, pumpkin pancakes and pumpkin bagels (had to use up the pumpkin). The cookies were easy and delicious as well as the pancakes and bagels.
