These baked oats taste like a mix between a pumpkin spice muffin and pumpkin cake. Also, they are super easy to make and the perfect quick breakfast, snack, and dessert.

  • Rolled Oats Or Quick Oats: Blend the rolled oats or quick oats into oat flour for these baked oats.
  • Baking Powder: Allows the baked oats to rise in the oven.
  • Salt: Just a pinch to enhance the flavors.
  • Sweetener: Sweeten these pumpkin baked oats with your sweetener of choice.
  • Cinnamon: It is added for flavor.
  • Pumpkin Pie Spice: To add some fall spice to these pumpkin baked oats.
  • Vanilla: A small amount for flavor.
  • Milk: Use your milk of choice in this recipe. We used unsweetened vanilla almond milk.

Which Oats Can Be Used For Baked Oats?

You can use rolled oats, old-fashioned oats, and quick oats to make baked oats. The oats will be blended into a flour-like consistency. Note that steel-cut oats do not work in this recipe. We love using quick oats because we have found that they make the fluffiest baked oats.

How To Make Pumpkin Baked Oats

First, add the rolled oats or quick oats to a blender and blend until you have a flour-like consistency.

Next, add the baking powder, salt, sweetener of choice, cinnamon, pumpkin pie spice, vanilla extract, and milk to the blender and blend.

After that, lightly pulse the egg and pumpkin puree with the rest of the ingredients.

Lightly spray an oven-safe ramekin with coconut oil. Then, pour the baked oats batter into the ramekin. Also, place the oven-safe ramekin on a baking sheet before placing it in the oven.

How Long To Cook Baked Oats

These pumpkin baked oats take 32-25 minutes to cook in the oven at 350 degrees Fahrenheit. These baked oats take a little bit longer to cook than some of our other baked oats because of the pumpkin puree. Just make sure the baked oats are thoroughly cooked and that toothpick comes out clean from the center before eating them.

When To Enjoy Pumpkin Baked Oats

These pumpkin baked oats are best enjoyed the day you bake them after they have slightly cooled.

Ingredients

  • 1/2 CUP rolled oats or quick oats

  • 1/2 TSP baking powder

  • pinch of salt

  • 2 TBSP monk fruit, sugar, or sweetener of choice

  • 1/2 TSP cinnamon

  • 1/2 TSP pumpkin pie spice

  • 1/2 TSP vanilla extract

  • 3 TBSP milk of choice

  • 1/3 CUP pumpkin puree

  • 1 egg

Directions

  • Preheat your oven to 350 degrees F. Then, add the rolled oats or quick oats to a blender and blend them into oat flour.
  • Add the baking powder, salt, sweetener of choice, cinnamon, pumpkin pie spice, vanilla extract, and milk to the blender and blend.
  • Lightly pulse the egg and pumpkin puree in with the rest of the ingredients.
  • Lightly spray an oven-safe ramekin with coconut oil. Pour the baked oats batter into the ramekin. Place the oven-safe ramekin on a baking sheet and then into the oven.
  • Bake the baked oats at 350 degrees F for 32-35 minutes, or until cooked through. Let the baked oats slightly cool and enjoy!
