  • 1 bag, 16 oz, of frozen corn, can substitute for grilled fresh corn or rinsed and drained canned corn

  • 1/4 CUP 0-fat Greek yogurt

  • 1 TBSP light mayonnaise

  • 1/2 TSP fresh lime juice

  • 4 oz fire-roasted diced green chiles

  • 1/2 TSP taco seasoning

  • 1/2 TSP garlic powder

  • 1/4 TSP onion powder

  • 1/4 TSP salt

  • 1/8 TSP black pepper

  • 1/4 CUP chopped red bell pepper

  • 1/4 CUP sliced green onions, about 2-3 green onions

  • 4 oz light feta cheese or cotija cheese

  • 2 TBSP fresh chopped cilantro

  • Add the 0-fat Greek yogurt, light mayonnaise, and fresh lime juice to a large bowl. Then, thoroughly mix. After that, add the fire-roasted diced green chiles, taco seasoning, garlic powder, onion powder, salt, and pepper to the large bowl and mix.
  • Add the corn, chopped red bell pepper, sliced green onions, light feta cheese or cotija cheese, and fresh chopped cilantro to the bowl. If you use frozen corn, there is no need to defrost it. The corn will defrost after mixing in about 20 minutes.
