It is so delicious and only takes a few minutes to mix together. It has all of the flavors of classic cowboy caviar, without all of the prep work and there is no oil or dressing to make. We used fresh pico de gallo salsa, which is way faster than prepping tomatoes, onions, and cilantro. Also, we used canned beans and frozen corn. Just mix all of the ingredients and enjoy!

Ingredients 

  • 12 ounce tub of fresh pico de gallo salsa
  • 15.5 ounce can of black beans, rinsed and drained
  • 15.5 ounce can of pinto beans or black eyed peas
  • 1 ½ cups frozen corn or one 15.5 ounce can of corn
  • 1 red bell pepper, 1 avocado, 1/3 cup light feta cheese, optional

Instructions 

  • Rinse and drain all of the beans. Then, add the beans to a large bowl. If you are using canned corn, rinse and drain it.
  • Add the pico de gallo salsa and frozen corn or rinsed and drained canned corn to the bowl with the beans. Thoroughly mix and enjoy! Optional: Add in sliced avocado, chopped red bell pepper, and light feta cheese.
