I got inspired to turn it into a savory burrito bowl and was so convinced about this and so excited to share it with you. I think Ella thought I was crazy but I told her to wait until you try it. She loved it and we devoured two bowls!

This cottage cheese burrito bowl is a winning combination. It’s vegetarian, gluten-free, and packed with protein. Also, it is full of delicious savory flavors.

Ingredients

  • 1 CUP fat-free cottage cheese

  • 1/2 CUP salsa of choice, we like fresh

  • 1/4 CUP black beans

  • 1/4 CUP pinto beans

  • 1/4 CUP corn

  • 1 TBSP red onion, diced

  • 1/4 CUP tomatoes, diced

  • 1 TBSP fresh cilantro, chopped

Directions

  • Rinse and drain the pinto beans and black beans. Also, if you are using frozen corn, defrost it. Then, dice the red onion, dice the tomatoes and chop the cilantro.
  • Mix the fat-free cottage cheese and salsa. This is the base of your bowl.
  • Add the pinto beans, black beans, corn, red onion, and tomatoes on top of your cottage cheese and salsa mixture.
  • Top your bowl with cilantro and enjoy! Some other great optional toppings are extra salsa, avocado, cheese, and a squeeze of lime.

    3. This was… interesting. Not bad at all and I will definitely make it again with a few tweaks. I can see this being really good if warmed or blended up (the cottage cheese and salsa) and used as a crema for taco night
