Ingredients

  • 1 large ripe peach, about 1 CUP chopped

  • 1/2 CUP frozen corn or grilled fresh corn

  • 2 TBSP seeded and finely diced jalapeño, about 1 medium jalapeño

  • 3 TBSP finely diced red onion

  • 2 TBSP chopped fresh cilantro

  • 1 TBSP lime juice, freshly squeezed

  • 1/4 TSP salt

Directions

  • Wash and dry the peach. Then, chop the peach into small even pieces. Next, remove the seeds from the jalapeño and finely dice it. After that, finely dice the red onion and chop the fresh cilantro. Also, if you use frozen corn there is no need to defrost it beforehand, it will come to room temperature in the bowl within about 10 minutes.
