It is the ultimate combination of flavors! They are extremely versatile and customizable with your favorite additions such as avocado, hot sauce, or roasted potatoes. Also, these homemade breakfast tacos are a healthier alternative!

How To Make Breakfast Tacos

These breakfast tacos are easy to make and come together in a few simple steps!

Step 1: Whisk the eggs in a bowl. Then, scramble the eggs in a pan over medium heat on the stove. Season the scrambled eggs with salt and pepper to taste.

Step 2: Cook the turkey bacon using your preferred method. See our post on how to cook turkey bacon in the oven. Place the cooked turkey bacon on paper towels to remove excess grease. Then, chop the cooked turkey bacon into small pieces.

Step 3: Chop the cilantro and slice the green onions.

Step 4: Once all the ingredients are cooked, assemble the breakfast tacos. Assemble the ingredients among four tortillas. As an option, warm up the tortillas first. Then, add the scrambled eggs.

  • 1/4 CUP light Mexican cheese blend

  • 1 tablespoon chopped fresh cilantro

  • 2 green onions, sliced

  • 2 tablespoons salsa of choice

  • 4 low-carb tortillas or tortillas of choice

  • roasted diced potatoes or sliced avocado, optional

Directions

  • Whisk the eggs in a bowl. Then, scramble the eggs in a pan over medium heat on the stove. Season them with salt and pepper to taste.
  • Cook the turkey bacon using your preferred method. To cook turkey bacon in the oven, place it on a sheet pan with parchment paper. Then, bake it at 400°F for 15-20 minutes. After that, place the cooked bacon on paper towels to remove excess grease. Next, chop the cooked turkey bacon into small pieces.
  • Chop the cilantro and slice the green onions.
  • Once all the ingredients are cooked, assemble the breakfast tacos. Assemble the ingredients among four tortillas. As an option, warm up the tortillas first. Then, add scrambled eggs, chopped cooked turkey bacon, shredded cheese, cilantro, green onions, salsa, and optional roasted potatoes or sliced avocado to the tortillas to make the tacos and enjoy!
